This recipe and pictures come from Adam F. from Warrenton, NC. He came up with this idea based on some simple ingredients that were already sitting in his pantry and the refrigerator. It took him only a few minutes to put everything together and prepare this delicious burrito bowl for dinner.
The recipe below is very flexible and allows plenty of room for creativity. Since the Egg Kits already include vegetables, herbs and seasoning, you don't need a lot of additional ingredients. Feel free to make it your own with favorite toppings, or use whatever you have at hand. Perfect for lunch or dinner, this comfort meal is only minutes away.
Ingredients

1Eatz Egg Kit - Qty 1

Water - 2 Tbsp.

Eggs - Qty 2

Cooking spray or oil

Cooked rice (brown or white) - 1/2 Cup

Canned black beans - 1/2 Cup

Queso fresco, or any cheese of your choice - 2 Tbsp. or as preferred

Salsa - 2 Tbsp. or as preferred

Other toppings of your preference
Directions
Prepare
Empty the contents of the Egg Kit into a bowl.
Add 2 tablespoons of water. Make sure to evenly mix the contents so that there are no clumps.
Add 2 eggs and mix well.
Let the egg mix sit for about a minute.
Cook
Lightly grease a skillet with 1 tsp. of oil and place over low-medium heat.
Add the prepared egg mix and scramble or fry the egg to your liking.
Serving
Place the rice and beans in a serving bowl, and lightly stir to mix evenly.
Top with your fried or scrambled eggs, salsa, cheese and any other ingredients as preferred.

Tips:
- Add your favorite toppings to the bowl such as mixed greens, meats, sour cream or hot sauce.
