OK who is a food blogger on Instagram and loves creating new recipes. She has come up with such a creative idea of
using egg kits in combination with ramen noodles to stuff bell pepper
cups! The bell peppers are stuffed in
layers, the first layer is of cooked ramen noodles and the second is of egg-whites
mix prepared with Egg Kits. She tops it
all off with the egg yolk and simply bakes! This is such a simple and adaptable
recipe, use your favorite pack of ramen noodles and even add your own spin to
it with your favorite toppings.
Ingredients

1Eatz Egg Kit - Qty 1

Water - 2 Tbsp.

Eggs - Qty 2

Large Bell Peppers - Qty 2

Packaged Ramen Noodles of your choice - Qty 1
Directions
Prepare
Empty contents of the Egg Kit into a bowl.
Add 2 tablespoons of water. Make sure to evenly mix the contents so that there are no clumps.
Separate the egg whites from the eggs and mix with the Egg Kit contents. Store yolks for later.
Prepare ramen noodles as directed on the package.
Assemble
Slice the tops off the peppers and remove the ribs and seeds inside.
Stuff each pepper cup with cooked noodles about halfway.
Divide the egg white mix in two and pour over the noodles in each pepper cup.
Top off each pepper cup with with an egg yolk.
Cook
Pre-heat oven to 350 F.
Place the peppers on a parchment lined baking sheet.
Bake for about 20-25 minutes, until the eggs are set.
Recipe Note
Tips:
- Add your favorite toppings to the mix if you like, such as mixed greens, meats, herbs or hot sauce.
- You can also sprinkle some shredded chease on top of the peppers before baking.
