This recipe and the picture comes from Savera T. from Raleigh, NC who runs a YouTube cooking channel for quick and convenient recipes. She has created these tasty and convenient empanadas that are filled with egg, vegetables, herbs and cheese. You can use store-bought empanada wrap or pie dough for the wrap. You can even use canned biscuit or crescent rolls pressed thinly for flakier empanadas.
This is such a versatile recipe; you can add additional toppings, serve with sauces of your choice and cook in several different ways. Empanadas can be cooked in several ways including deep frying, pan frying, baking or air-frying. The recipe below shows three methods of cooking the empanadas.
Ingredients

1Eatz Egg Kit - Qty 1

Water - 2 Tbsp.

Eggs - Qty 1 for filling, Qty 2 if using egg wash for baking or air-frying

Shredded cheese of your choice - 2 Tbsp.

Pre-made Empanada wrappers - Qty 4 or pie dough enough to make 4 discs roughly 5" in diameter.

Salt to taste

Directions
Prepare Filling
Empty the contents of Egg Kit into a bowl.
Add 2 tablespoons of water. Make sure to evenly mix the contents so that there are no clumps.
Add 1 egg and mix well. Let the egg mix sit for about a minute.
Add cheese to the mix.
Prepare Empanada Dough
If using pre-prepared empanada wrappers, simply line them up flat in a tray or a parchment lined baking sheet to get them ready for filling.
If using pie dough, roll out the dough flat with a rolling pin and cut out 4 circular discs about 5" in diameter with a small bowl or a cup. Line them up for filling.
Assemble Empanadas
Add about 2 Tbsp. of the prepared egg mix in the center of each disc, fold it over in a half-moon shape and seal the edges by pinching together. You can also crimp the edges using a fork.
Preparing Egg Wash
Crack an egg into a bowl and beat it thoroughly with a fork. Add 2 tablespoons of water and a pinch of salt. Stir until combined.
Cooking Option: Bake
Pre-heat oven to 375 F.
Place empanadas on a parchment-lined baking sheet. Brush tops with egg wash.
Bake for about 25-30 minutes or until golden brown, flipping over halfway through.
Cooking Option: Fry
Heat oil in a deep-fryer to 375 F.
Place empanadas into the fryer and cook for about 5 minutes, turning once to brown on both sides. Remove from fryer when done and drain on paper towels.
Cooking Option: Air Fry
Pre-heat air fryer at 375 F.
Brush tops with egg wash and lightly spray one side with oil. Air-fry for about 5 minutes and flip the empanadas. Spray some more oil and air- fry for another 5 minutes or until golden brown on both sides.
Recipe Note
Tips:
- Add your favorite fillings or seasoning to the empanadas such as meats, herbs or hot sauce.
- Brushing the empanadas with egg wash before baking and frying gives them a golden, flakey crust.
